The fruit for this wine was picked in the last week of April, 2017 from our Billi’s Vineyard in the Strathbogie Ranges. The wine was fermented in high tech, stainless steel, sweep-arm fermenters at 25°C. In fermenting this wine, we used a combination of yeasts: RP15- which is a fairly neutral yeast and thus allows the natural aroma and flavour characteristics of the fruit to express itself, and M2- which is a strong ferment yeast and adds complexity to the blend. This wine was matured using new French oak (80%) and American oak (20%).
2017 was a cold and challenging season. As a robust variety our Cabernet enjoyed the cool conditions. The long hang time ensured a good slow development of flavour with slow building sugar levels. This meant we could keep the alcohol below 14% and still have ripe flavours. We chose to blend in a small portion of Merlot (6%) picked from the same vineyard which contributes ripe juicy plum flavours and fills out the mid palate.
This wine is a dense dark red with youthful purple hues. On the nose are aromas of dark blackberry fruits, oak spice and hints of chocolate. The palate is ripe and rich with dark cherry and plum flavours.

This is a harsh Australian landscape with soil that is nutrient poor and retains very little water – difficult for farmers to grow livestock, but a wonderful landscape for grape growers seeking to grow fruit with great intensity. Couple these attributes with the cool climate, gentle aspect and glorious summer sunshine and the Strathbogie Ranges is an ideal region for growing grapes and making wine.
The mean January temperature is 19.15°C and the average annual rainfall in our family vineyards is 700 mm (28 inches). Harvest in the Strathbogie Ranges generally occurs from late February through to early May.
