Lois Blanc de Blancs is 100% Chardonnay, sourced from some of the highest, coolest sites across the Adelaide Hills wine region.
Season
Since 2010, we have been holding back a component of non-vintage Lois base in French oak foudres, carefully drawing down and then replenishing.
Vinification
This non-vintage component is blended into the new vintage sparkling base each year, creating a unique, distinct and consistent wine. The new vintage provides fresh and vibrant fruits while the non-vintage component adds a richness and complexity from time on lees and the natural ageing process. This approach provides a consistent house style unique to Lois and as our non-vintage base ages, it gets better with every year.
